Somen Pasta Noodles

Somen are very thin, white Japanese noodles, less than 1.3 mm in diameter, made from wheat flour. As with many Japanese noodles, somen noodles can be served hot or cold. If cold, they are usually served with a light dipping sauce (tsuyu) flavored with onion or ginger (myoga). When served hot, somen is often mixed into a soup (nyumen).
